C&C's £750,000 contract included upgrading an existing kitchen in the 12th Century, Grade I listed Old Hall followed by the creation of an efficient, new production kitchen in the basement of the listed 17th Century Great Hall. A final mezzanine-level preparation and service kitchen serves the main banqueting hall.
The new facility was designed and specified by Tricon Foodservice Consultants. It handles functions for 6-8,000 guests a week, from silver service meals in the 350-seat Great Hall to light buffets for cocktail receptions with up to 650 guests. The restaurant also serves 180 lunches daily, including Sundays.
C&C went on to win the similar £1 million fit-out of the House of Lords Refreshment Department, again with Tricon.
